  1. Preheat oven to 190°C (375°F) have an oven proof dish ready about 7 or 8 inches dia. You can use a cake tin lined with grease proof paper.

  2. Put the oats, ground flax, and sugar in a large bowl and stir together

  3. Blend the milk, vanilla and nut butter or mix by hand if you don't have a blender. Add the vanilla

  4. Pour the wet ingredients into the dry ingredients and stir until you can't see any dry oatd. Add the strawberries and stir to combine

  5. Spoon the mixture into your dish/cake tin and bake for approx. 35 to 40 minutes. Cooking time may vary

  6. Remove from the oven and allow to cool

Storage & reheating

When cool, cover and refrigerate. The strawberry oatmeal will last up to seven days.  It will freeze for 3 months. Freeze in individual portions and leave to defrost overnight.

Enjoy it hot or cold. If you want to reheat you can microwave or reheat in the oven. Reheating in the oven will make it a little dry so serve with maple syrup or vegan yogurt.

Making ahead

You can make this the day before. Follow the recipe, add the mixture to the dish, then cover and refrigerate.
