A tasty vegan scramble made with tofu with added spinach for extra iron and seasoned with paprika

Ingredients
  

  • 140 oz extra firm tofu
  • 450 g spinach
  • 2 tbsp nutritional yeast optional
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ¼ tsp salt optional
  • ¼ tsp paprika
  • ¼ tsp tumeric
  • ¼ tbs pepper
  • 2 tps olive oil or use 1 cal spray

Instructions
 

  • Drain the tofu, break it apart using your hands or two forks, until it resembles scrambled egg
  • In a large mixing bowl mix together the tofu, spinach, yeast, salt, tumeric, paprika and pepper. Leve it to rest for 5 minutes
  • Saute the tofu mix in the oil or spray the pan with 1 cal spray and cook for about 8 – 10 minutes

Notes

If you prefer a wetter ‘scramble’ saute´ with 2 tablespoons of water
