- 110 grams vegan butter (softened – use solid butter not spreadable)
- 80 grams caster sugar
- Zest of 1 lemon (finely grated)
- 10 grams cornflour
- ½ teaspoons baking powder
- ½ teaspoons mixed spice
- ½ teaspoons cinnamon
- 70 grams currants
- 1-2 almond milk
Glaze:
- 2 teaspoons maple syrup
- 3 teaspoons milk
- caster or icing sugar for sprinkling
