Description

A tasty vegan scramble made with tofu with added spinach for extra iron and seasoned with paprika

Ingredients
  • 140 ounces extra firm tofu
  • 450 grams spinach
  • 2 tablespoons nutritional yeast (optional)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt (optional)
  • 1/4 teaspoon paprika
  • 1/4 teaspoon tumeric
  • 1/4 pepper
  • 2 olive oil or use 1 cal spray
Instructions
  1. Drain the tofu, break it apart using your hands or two forks, until it resembles scrambled egg

  2. Method

    In a large mixing bowl mix together the tofu, spinach, yeast, salt, tumeric, paprika and pepper. Leve it to rest for 5 minutes

  3. Saute the tofu mix in the oil or spray the pan with 1 cal spray and cook for about 8 - 10 minutes
