Description
Make a tasty meat free supper in just 30 minutes. Thi vegan Red Pepper and black bean tikkka masala is full of nutrients and low in fat.
Ingredients
  • 1 tablespoon vegetable oil
  • 1 onion (chopped)
  • 2 red peppers (deseeded and cut into strips)
  • 1 garlic clove (crushed)
  • thumb-sized piece of ginger (grated)
  • 1 red chilli (finely chopped)
  • ½ tablespoons garam masala
  • ½ tablespoons curry powder
  • 1 tablespoon tomato purée
  • 415 grams can black beans (drained)
  • ½ lemon (juiced)
  • rice and coriander (to serve)
Instructions
  1. Heat the oil in a saucepan over a medium heat, add the onion and red peppers with a pinch of salt and fry until softened, around 5 mins. Add the garlic, ginger and red chilli along with the spices and fry for a few mins longer.

  2. Spoon in the tomato purée, stir, then tip in the black beans along with 100ml water. Simmer for 5 mins, then add the lemon juice. In the meantime cook the rice according to the instructions.

  3. Serve with the rice and scatter over the coriander leaves.
