A really quick and easy vegan chili con carne recipe made using a ready-made sauce base. Ideal for those cold nights when you're too busy to cook from scratch. The recipe is low fat and under 500 calories if served with boiled rice

Ingredients
  • 2 olive oil
  • 500 grams quorn mince
  • Aldi Chilli con carne sauce
  • 400 grams kidney beans (drained)
  • 400 grams tomatoes
  • 1 red pepper (chopped)
  • 2 carrots (chopped.)
  • 1 stick celery (chopped)
  • 1 onion (chopped)
  • 1 red chilli (chopped)
  • 1 green chilli (chopped)
  • 1 teaspoon chill flakes optional
  • 2 garlic cloves (minced)
Instructions
  1. Pour oil in deep pan lightly fry carrots for 3 – 4 minutes, add onion, garlic peppers, and chillis, cook for 7 minutes, add chopped tomatoes and drained kidney beans cook for 2 minutes. Add chilli flakes
  2. Add Aldi chilli con Carne sauce and simmer for 15 minutes

  3. Serve with with boiled rice rice. The chilli can be frozen for up to 3 months
